  • The 2015 Reserve Cabernet is a Bordeaux style blend, comprising 85% Cabernet sauvignon, 10% Malbec and 5% Pettit Verdot. All premium fruit components are sourced from the Wilyabrup sub region of Margaret River. The fruit is handpicked and then fermentation occurs in open vessels, plunging the cap by hand to gently extract colour, tannin, flavour and aroma precursors from the skins. This Cabernet is matured for 18 months in new and used French oak barriques and Hogsheads. This full-bodied wine is deep dark red, has a bouquet that is complex, comprising integrated, high intensity aromas of violets, dark forest floor - berry fruits, red currants, Christmas cake, Chinese five spice, tobacco leaf, leather, earth and dark chocolate nuances. The mouth filling palate is dense, plush, concentrated and vibrant, yet finishes long and elegantly with fine supporting tannins.

Maturation occurs over 11 months in a mixture of small and large format, new and used, French oak. This wine is youthful and powerful, with lifted fresh aromas, presenting with a concentrated lime core, supporting stone fruit characters, tight natural acid and complemented by cream and brioche nuances.
