The 2015 Reserve Cabernet is a Bordeaux style blend, comprising 85% Cabernet sauvignon, 10% Malbec and 5% Pettit Verdot. All premium fruit components are sourced from the Wilyabrup sub region of Margaret River. The fruit is handpicked and then fermentation occurs in open vessels, plunging the cap by hand to gently extract colour, tannin, flavour and aroma precursors from the skins. This Cabernet is matured for 18 months in new and used French oak barriques and Hogsheads. This full-bodied wine is deep dark red, has a bouquet that is complex, comprising integrated, high intensity aromas of violets, dark forest floor - berry fruits, red currants, Christmas cake, Chinese five spice, tobacco leaf, leather, earth and dark chocolate nuances. The mouth filling palate is dense, plush, concentrated and vibrant, yet finishes long and elegantly with fine supporting tannins. -

Matured in barrel for 18 months before blending in small additions of Malbec and Petit Verdot, adding layers of complexity. Elegant yet powerful. The Sauvignon Blanc is produced with a combination of Karridale Sauvignon blanc and Wallcliffe Semillon, sub regions within Margaret River, this is a simple, fun, unwooded fruit forward style, displaying white floral aromas and lifted musk confectionary notes, the palate is citrus, melon, lychee and lime fruit characters, carried by soft, gentle acidity. -

Sweet blue berry fruits and dark chocolate present on the nose while fruit cake, blackberry, cassis, black olive and tobacco leaf characters merge on a fine, lingering palate. The moderate climate allows for slow, steady fruit maturation and the development of concentrated, powerful flavours. Fruit is hand picked and fermented in open vessels, plunging the cap by hand to gently extract desirables. This Cabernet is matured for 18 months in new and used French oak barriques and Hogsheads. This full bodied wine is dense, deep and dark. The bouquet is complex and intense. Black forest floor berry fruits, tobacco, earth and dark chocolate characters abound. The palate is rich, mouth filling and concentrated. The structure is firm yet soft. Ready to drink now however will continue to evolve for many years when cellared correctly. -
The Chardonnay is hand picked from the Margaret River sub region of Wallcliffe. The fruit is whole bunch pressed and fermented with natural wild yeast in French oak barrels. Maturation occurs over 11 months in a mixture of small and large format, new and used, French oak. This wine is youthful and powerful, with lifted fresh aromas, presenting with a concentrated lime core, supporting stone fruit characters, tight natural acid and complemented by cream and brioche nuances.
