2017 Halcyon Birds Chardonnay

The Chardonnay is hand picked from the Margaret River sub region of Wallcliffe. The fruit is whole bunch pressed and fermented with natural wild yeast in French oak barrels. Maturation occurs over 11 months in a mixture of small and large format, new and used, French oak. This wine is youthful and powerful, with lifted fresh aromas, presenting with a concentrated lime core, supporting stone fruit characters, tight natural acid and complemented by cream and brioche nuances.
